History of the Estate
Descended from a distinguished line of winegrowers dating back to 1840, the Zimmer family managed the “Preiss-Zimmer” winery before it was acquired by the Turckheim winery in 1988.
The estate then supplied grapes to the Turckheim winery, which processed the product and marketed it under the Preiss-Zimmer brand.
In 1999, proud and ambitious, the Zimmer family decided to return to bottling wines from its own vines on the estate. The estate currently comprises 9 hectares of vines, spread over 66 plots around Riquewihr, 14 of which are classified as Grand Cru.
Thus, the redevelopment and commercial development work progressed well, and demand flourished until the untimely death of Antoine Zimmer, owner until 2001.
His wife, Régine, and his daughters, Laure and Carole, then decided to take up the torch with the aim of continuing to produce the estate’s wines, respecting family know-how and a guarantee of quality, ensuring the authentic expression of Alsatian terroirs.

Sustainable viticulture
Concerned about the impact of agriculture on our environment, Zimmer follows a sustainable viticulture approach, minimizing as much as possible the use of chemicals and other fertilizers that can harm the fertility of our land.
We prune our vines using the double Guyot system, with grass cover in every other row, and trellising is done entirely by hand.
To ensure impeccable quality, our yield is lower than the permitted yields.
We harvest manually in order to sort directly on the vine.
We crush the whole bunches using a slow pneumatic press, which allows us to maintain constant control over the quality of our products.
Settling takes place a few days after pressing in a completely natural and static manner. This allows us to separate the juice from the various suspended solids commonly referred to as “sludge.”
Next comes the fermentation and aging phase in oak barrels on fine lees.
Our wines will finally be bottled at the estate.
